Chicken & pasta in an oven bake are a wonderful combination that will please most family members or a casual meal with friends.
This chicken bake is elevated above standard pasta bakes through the addition of vegetables as well as the addition of macaroni and cheese. Mixed through in a beautiful creamy sauce that adds a rich texture to the mixture. Topped with a shredded cheese blend and a bread crumb mixture that provides a beautiful golden crust and crunch to the pasta bake.
This is really nice meal that is a firm family favourite. This recipe makes a large mixture that will likely leave leftovers. They can be easily refrigerated to be re-heated the next day or just as easily frozen to be brought out when you are time poor on a hectic weeknight.

Chicken & Vegetable Bake With Macaroni & Cheese
Instructions
Pre-heat oven to 190° C (fan forced)
Cook Macaroni according to packet instructions.
Drain water from macaroni and place in a large baking dish.
Heat oil in a large frying pan over medium high heat.
Add chicken and cook until browned. About 7-8 minutes.
Remove from pan and spread over macaroni in baking dish.
Spread vegetables over the chicken and macaroni.
Melt 3 tbsp butter in frying pan on medium heat.
Add flour and stir through until the sauce thickens and a paste forms.
Add milk and stir to mix through.
Add onion salt, 2 cups of shredded cheese and soup and stir constantly to mix through. Continue stirring until cheese melts and a smooth mixture is produced.
Remove from heat and pour over the vegetables in the baking dish.
Use a wooden spoon to stir the mixture to evenly spread the ingredients throughout the baking dish.
Sprinkle remaining cup of shredded cheese over the vegetables.
In a small bowl mix bread crumbs, melted butter, garlic salt and pepper. Mix to fully combine.
Spoon bread crumb mix over the top of the baking dish.
Place in oven and bake for 30 minutes until bread crumbs are golden brown.
Remove from oven and serve
