This is another relatively simple and easy to make chicken dish that can be cooked when you are time poor and looking for something easy but still full of flavour.
This is a very easy way to turn a pan fried chicken breast into a wonderful meal packed full of flavour. Drench the chicken in a creamy sauce of sun-dried tomatoes, cream, spring onion, parmesan, garlic and basil. The flavours blend beautifully to elevate this to a great, easy to make weeknight meal.
You can substitute chicken thighs for this meal if that is your preference, however given there is plenty of sauce with this meal, chicken breast works perfectly.

- 4 Chicken Fillets breast fillets
- 2 tbsp Olive Oil
- 3 Spring Onions finely chopped
- 2 cloves Garlic crushed
- 1 cup Chicken Stock use stock cube
- 2 1/2 tsp Corn Flour
- 1/2 cup Sun-Dried Tomatoes roughly chopped
- 1/4 cup Thickened Cream
- 1/3 cup Parmesan cheese grated
- 3 tbsp Basil Leaves roughly chopped

Instructions
- Heat 1 tbsp olive oil in a large frying pan on medium high heat.
- Add chicken breast fillets and cook until browned and cooked through. Remove from pan, keep warm and set aside.
- Add remaining olive oil to pan and add spring onion and cook until softened, about 2-3 minutes.
- Add garlic and cook for a further 30 seconds. Be careful not to burn the garlic.
- Add chicken stock and stir to mix through
- In a separate small bowl add 1 tbsp water to the corn flour and stir to mix fully, then add to the frying pan.
- Add sun-dried tomatoes, season with salt and pepper, then stir to mix through.
- Bring to boil then set to simmer and allow to simmer for about 1 minute, while constantly stirring.
- Add cream and parmesan and stir constantly to mix through until cheese has melted.
- Remove from heat, add chicken fillets back to pan and spoon sauce over chicken fillets.
- Garnish with basil and serve.
