Choc Orange Friands

Friands are a really easy treat or dessert to make.  They usually only require a few ingredients and everything can be mixed by hand within a few minutes.  After a short time baking, you get a wonderful treat for morning or afternoon tea or just whenever you feel like a sweet ‘pick-me-up’.

The chocolate and orange flavours are a beautiful combination within the moist, cake like texture of the friand.  The orange slice baked into the top of each friand adds an extra juicy sweetness and burst of orange flavour to further enhance the overall result.

These friands are best served warm and are great tasting on their own.  They are also terrific with a dollop of cream as well!

  1. Pre-heat a fan forced oven to 180°C (350°F).
  2. Grease a 9 hole friand pan
  3. In a large bowl, sift in icing sugar and plain flour.
  4. Add almond meal and stir to mix through.
  5. Add egg whites and melted butter and stir to fully combine.
  6. Add chocolate chips and fold through mixture.
  7. Add orange zest to mixture and fold through.
  8. Evenly spoon the mixture into the friand pan holes.
  9. Peel the orange, cut 5 slices from the orange (start from the middle) then cut each slice in half.
  10. Top each friand with a half slice of orange.
  11. Place in oven and bake for about 25 minutes or until a skewer inserted into the centre of a friand comes out clean.
  12. Cool in pan for about 10 minutes before turning out onto a wire rack to cool.
  13. Dust with icing sugar before serving. These friands are best served warm.
