Souffles are a surprisingly easy dessert to make. They generally look fantastic and give the appearance of a rich decadent dessert. They are a fantastic dessert to have when you invite friends over for dinner.
The chocolate souffle uses dark chocolate to provide a wonderfully ‘puffy’, soft texture while also retaining a rich melted finish. Served with whipped cream or ice cream for a truly decadent dessert.
The only drawback to serving souffles at a dinner party is that you really can’t make souffles in advance. You have to make them when you are ready to eat them to get best results.

- 2 tbsp Caster Sugar to line souffle dishes
- 50 g Butter
- 1 tbsp Plain Flour
- 200 g dark chocolate chopped
- 2 Egg Yolks
- 4 Egg Whites
- 1/4 cup Caster Sugar

Instructions
- Pre-heat a fan forced oven to 180°C (350°F).
- Grease four ramekin dishes (approx 1 cup in size) and sprinkle inside of dish evenly with caster sugar. Shake off excess.
- Melt butter in a small saucepan over medium-high heat.
- Add flour and stir to combine with butter until mixture thickens.
- Remove from heat and add chocolate & egg yolks and stir to fully combine. Transfer to a large bowl.
- Add egg white to a separate bowl and using an electric mixer, beat until soft peaks form.
- Slowly add caster sugar while continuing to beat the egg whites. Beat until fully combined.
- Add the egg white mixture (in two batches) to the chocolate mixture in the large bowl and fold through until just combined.
- Spoon mixture evenly into the ramekin dishes and bake in oven for about 15 minutes or until souffles are puffed up, cooked through and browned on top.
- Remove from oven, sprinkle top with icing sugar and serve. Note: we like to serve our souffles with whipped cream or ice cream (or both).
