Beef enchilada are a firm family favourite. There are so many beef enchilada variations out there and everyone has their own favourite list of ingredients. This is a really simple, yet tasty enchilada bake that I think you will enjoy.
The beef is initially browned then mixed with enchilada sauce and capsicum. It is then spooned into tortilla which are rolled and placed in a baking tray. Sprinkled with cheese it is then baked in the oven. Finally it is topped with a mixture of Avocado & Roma Tomato and served with sour cream. A great, simple, tasty meal that the family will love.
This recipe is fairly simple in its ingredients, however add others, such as chillies, beans or corn to your preference. Whichever way you have it, this is a recipe you will come back to again and again.

Easy Beef Enchilada Bake
Instructions
Pre-heat a fan forced oven to 200°C (390°F)
Heat a large frying pan over medium high heat.
Add beef mince and cook for about 5 minutes until browned. Break up lumps with a wooden spoon.
Add Enchilada Sauce & red capsicum, stir to mix through and cook for a further 3 minutes. Remove from heat.
Spoon a thin layer of beef mince mixture over the base of a large baking dish.
Divide the remaining beef mixture among the 8 tortillas.
Roll each tortilla to enclose the filling and place seam side down into the baking dish.
Sprinkle shredded cheese over the top of the tortillas.
Place in oven and bake for 13-15 minutes or until cheese melts and turns golden.
Remove from oven and spoon tomato & avocado over the tortillas before serving
