For a quick, simple & easy to make week night meal, try this Asian stir-fry.
The pork is initially browned in the wok, then set aside. The capsicum & broccoli are then added along with the hoisin & chilli sauce. Stock and garlic are also added. Once the sauce is ready, the hokkien noodles and pork are added to the wok to stir-fry & heat through. Topped with peanuts for a delicious, quick week night meal done in about 30 minutes.
Aside from heating the hokkien noodles, this meal is all cooked in a wok, so it is easy to cook and clean-up is a breeze.
I use miold chilli sauce to create a mildly spiced dish, however use a hotter chilli sauce to your preference.

- 2 tbsp Peanut Oil
- 450 g Hokkien Noodles 1 packet
- 500 g Pork Strips
- 1 Red Capsicum diced
- 250 g Broccoli cut into florets
- 1/4 cup Hoisin Sauce
- 1 tbsp Chilli Sauce I use mild chilli sauce
- 2 tbsp Chicken Stock use stock cube
- 1 clove Garlic crushed
- Peanuts crushed to garnish

Instructions
- Prepare Hokkien noodles per packet instructions.
- Heat peanut oil in a wok over high heat.
- Add pork strips and cook until browned. Remove from wok, set aside and keep warm. Cook pork strips in batches.
- Add capsicum & broccoli and cook for about 1 minute.
- Add Hoisin sauce, chilli sauce, chicken stock and garlic. Continue cooking for about 2 minutes while stirring regularly.
- Add pork back to back along with the Hokkien noodles. Stir to mix through and coat the pork and noodles with the sauce. Cook for about 3 minutes to heat through.
- Remove from heat and serve. Garnish with crushed peanuts
