Honey Garlic Chicken is a really easy dish to make with very few ingredients and very little effort required. The main time is the passive wait while the chicken marinates. You can prepare well in advance and simply leave the chicken to marinate in the refrigerator until you are ready to cook.
The honey garlic marinade is a perfect mix of sweet honey offset by a soy and tomato sauce combination. Marinated, basted and topped on moist juicy baked chicken thighs and the result is a sensational burst of flavour with each mouthful. The simple ingredients produce an amazing result.
Chicken thighs are best for this recipe, since dark meat is moist and full of flavour, and ideal for baking. You can use also use breast fillets, however the result will be a little drier.
We serve this dish with either vegetables or salad, however you could also serve on a bed of rice and serve with more of the leftover marinade to soak into the rice. This creates a great result as well.

Honey Garlic Chicken
Instructions
Marinate the chicken fillets before cooking. Marinate for at least 30 minutes.
Add soy sauce, tomato sauce, honey and garlic to a large bowl and stir to mix completely.
Add thigh fillets and mix through to cover completely with the marinade. Cover bowl with cling wrap and place in refrigerator for at least 30 minutes to marinate.
Preheat oven to 180°C (fan forced).
Line a baking tray with baking paper and place chicken fillets onto the tray. Keep marinade in the bowl. Using a brush, baste the chicken fillets with the marinade, then place in the oven to cook for 30 minutes, or until chicken is cooked through.
While the chicken is cooking, add the marinade to a saucepan and bring to a boil. Reduce heat and simmer for 20 minutes to allow marinade to thicken.
Once chicken is cooked, remove from oven and brush chicken with the marinade or spoon marinade onto chicken before serving. Serve with vegetables or salad.
