This is a simple, easy to make recipe that produces a wonderful mixture of flavours that elevate it above the simplicity of the dish.
This makes a wonderfully subtle creamy honey mustard sauce to accompany the chicken. Add some crunch with the snow peas and Jasmine Rice to soak up the beautiful sauce and you have a great meal that you will want to have again and again.

Ingredients
- 2 tbsp Vegetable Oil
- 2 large Chicken Fillets use breast fillets
- 1 Red Capsicum thinly sliced
- 1 Brown Onion diced
- 2 cloves Garlic crushed
- 2 tbsp Honey
- 1 tbsp Wholegrain Mustard
- 300 ml Thickened Cream
- 100 g Snow Peas
- Coriander to garnish
- Jasmine Rice to serve

Instructions
- Heat 1 tbsp of vegetable oil in a frying pan on high heat.
- Add chicken to pan and cook through until browned. Set aside on a plate.
- Heat remaining oil in pan and add capsicum, onion and garlic and cooking for approx. 5 minutes until tender.
- Add honey and mustard and stir through
- Add cream, reduce heat to low, stir and simmer for approx 5 minutes until sauce thickens.
- Add chicken back into pan along with snow peas and heat for approx 2-3 minutes
- Serve on Jasmine rice and garnish with coriander
