Honey Pepper Chicken is a wonderful Chinese inspired dish that is made simply with not too many ingredients.
The combination of honey, pepper and soy sauce produce a fantastic marinade for the juicy thigh fillets. The pepper is wonderfully underpinned by the ginger to produce just the right amount of kick. It is not overpowering at all.
This meal is cooked in a wok so it is quick and easy to make. Clean up is easy as well. You can’t ask for much more (except perhaps to have someone make it for you…)
Serve with Jasmine Rice to soak up the beautiful sauce. Add more vegetables to your choice, however my preference is simply the onion and capsicum to keep the dish very simple.

Ingredients
- 800 g Chicken Fillets use thigh fillets, cut into bite size pieces
- 2 tbsp Olive Oil
- 1 Brown Onion diced
- 1 Green Capsicum diced
- Steamed Jasmine Rice to serve
Marinade
- 1/3 cup Soy Sauce
- 3 tbsp Honey
- 3 tsp Black Pepper
- 2 tsp Ground Ginger

Instructions
- In a large bowl, add soy sauce, honey, black pepper and ground ginger. Stir to combine.
- Add chicken and mix through marinade to coat the chicken pieces.
- Place bowl in refrigerator for 30 minutes to marinate.
- Heat a wok on medium to high heat and add chicken and marinade.
- Cook for 7-10 minutes until chicken is cooked through. Remove chicken and marinade from wok and set aside in a bowl.
- Add 2 tbsp olive oil to wok.
- Add onion and capsicum and cook for about 3 minutes until onion and capsicum begin to soften. Stir regularly
- Add chicken and marinade back into wok and cook a further 2 minutes. Mix through and stir constantly.
- Remove from wok and serve with Jasmine Rice.
