A nice juicy chicken oven bake is usually very popular in our house. The great thing, for me, with an oven bake is you simply prepare the meal, put it in an oven and let all the magic happen without much interference from me in the process. This meal requires a little pre-cooking of the chicken, but is really easy to make.
The chicken is initially browned before being oven baked in a lovely brown sugar, garlic and smoked paprika sauce. A subtle lemon flavour comes from the added lemon wedges. Red onion is also added to soak up the sauce and provide a fabulous depth of flavour to this dish. Some oregano & chilli round out this wonderful meal. Serve with rice to soak us the sensational sauce.
This recipe provides plenty of sauce to bake the chicken in to keep it moist and juicy throughout. It also provides a great depth of flavour to add with your rice.

Lemon Paprika Baked Chicken
Instructions
Pre-heat a fan forced oven to 180°C (350°F).
Heat olive oil in an oven proof pan over medium high heat.
Add chicken drumsticks & thighs and cook for about 6-7 minutes until just turning brown.
While chicken is cooking, in a jug add chicken stock, brown sugar, smoked paprika & garlic and stir to mix through.
Place red onion wedges and lemon wedges around the chicken pieces in the pan.
Pour stock mixture evenly over the chicken pieces, then remove from heat.
Sprinkle the chicken with oregano sprigs and chilli.
Place into oven and bake, uncovered, for 25 - 30 minutes until chicken is cooked through.
Remove from oven and serve with long grain rice.
