This is another simple to make stir-fry to add to the list of quick, easy & simple meals to make for dinner.
The pork is first cooked in the wok. Shallots & lemongrass are added along with sweet chilli sauce, fish sauce & lime juice to create a vibrant, tasty sauce for the stir-fry. Rice noodles, mint & coriander are tossed through before serving. A wonderful stir-fry with a beautiful lemongrass flavour.
The rice noodles are cooked separately, otherwise this meal is all done in the wok. Prepared and made in around 30 minutes makes this a very good option for dinner.

- 200 g Rice Vermicelli Noodles
- 2 tbsp Peanut Oil
- 500 g Pork Mince
- 3 Shallots diced
- 2 tbsp Lemongrass Paste
- 1/2 cup Sweet Chilli Sauce
- 3 tbsp Lime Juice
- 3 tbsp Fish Sauce
- 1/2 cup Mint Leaves sliced
- 1/2 cup Coriander Leaves sliced
- 1 Long Red Chilli finely sliced

- Add rice noodles to a large pan of boiling water. Remove from heat and let stand for approx 5 minutes until noodles are tender. Drain and set aside.
- Heat 1 tbsp peanut oil in a wok over medium high heat.
- Add half of the pork to the wok and cook for approx 3 minutes or until browned. Remove from wok, set aside and keep warm.
- Add remaining pork to the wok and repeat process. Add additional peanut oil if required. Remove from heat and keep warm with other pork.
- Add another 1 tbsp peanut oil to wok.
- Add shallots & lemongrass paste and stir-fry for 1-2 minutes.
- Add pork back to wok along with sweet chilli sauce, lime juice & fish sauce. Cook for a further 1-2 minutes until pork is heated through.
- Add noodles, mint and coriander to wok and toss to mix through and combine.
- Remove from heat and serve.
