Orecchiette With Sausage, Kale & Mushrooms

This is a really easy to make pasta meal that does not require a lot of steps to make and has relatively few ingredients.  It’s not lacking in flavour however.

The Orecchiette and pork sausage are each cooked separately and set aside.  The mushroom, shallot, kale and cream mixture is then cooked to create a tender blend before mixing through the pasta and sausage.  The end result is a hearty, very flavoursome & filling meal.

You can add other vegetables such as broccolini if you wish.  The choice is yours, however this combination works really well together.

The meal can be prepared and cooked in around 30 minutes, so a great choice when you are time poor.

  1. Cook Orecchiette pasta according to packet directions. Drain and set aside.
  2. Heat 1 tbsp olive oil in a large frying pan over medium high heat.
  3. Add pork sausage and cook until browned. Use a wooden spoon to break up clumps.
  4. Remove from pan, transfer to a plate and ceep warm.
  5. Add mushroom to pan and cook for about 4 minutes while stirring frequently. Cook until mushroom is browned and tender.
  6. Add shallot and cook for a further minute while stirring constantly.
  7. Add kale and cook a further minute or two until kale wilts.
  8. Add stock, reduce heat and simmer for about 2 minutes.
  9. Add thickened cream and stir to mix through.
  10. Add sausage to pan, stir to mix through then simmer for about 30 seconds, then remove from heat.
  11. Add cooked orecchiette to pan and return pan to medium high heat. Stir to mix orecchiette through and cook for about 1 minute while stirring regularly. Season with salt and pepper.
  12. Remove from heat and serve.
