Pork Sausage & Broccoli Rigatoni

Pasta meals are usually easy to make and provide a good weeknight dinner option.  This is a great pasta dish with a wonderful mixture of vegetables, meat and pasta, mixed in a creamy parmesan sauce.  A real crowd pleaser!

The premium Italian pork sausage adds a beautiful depth of flavour to this dish.  The broccoli adds a nice crunch while the Roma tomatoes blend perfectly with the cream and parmesan cheese that is mixed through.  Mixed with Rigatoni before serving and this is terrific pasta dish that will please the entire family.

This dish can be prepared and made in around 30 minutes so is a great option when you are pressed for time and a hungry family is waiting.

Leftovers can be easily stored in the refrigerator for a few days.

  1. In a large saucepan cook rigatoni according to packet directions.
  2. In the last 2 minutes of cooking the rigatoni, add broccoli to the pasta in the saucepan. Once cooked drain water from saucepan.
  3. Remove casings from pork sausages.
  4. In a large frying pan over medium high heat, add pork sausage and cook for about 5 minutes or until browned. Break up sausage lumps with a wooden spoon.
  5. Add tomatoes, stir to mix, and cook for a further 2 minutes until heated through.
  6. Add cream and bring to boil.
  7. Add pasta, broccoli & parmesan and stir to mix through.
  8. Remove from heat and serve. Sprinkle with additional parmesan, as required.
