I really like stir frys for a few reasons. They are easy to prepare and cook and they usually raise the flavour and texture of the combined vegetables to create what I think is a well balanced meal.
This stir fry blends a few subtle flavours together. There is a hint of ginger, soy as well as sweet chilli that combine to create a very satisfying taste.
Mixed through with hokkien noodles makes this a good addition to your range of quick and easy weeknight dinners.

Sweet Chilli Beef With Hokkien Noodles
Instructions
Cook Hokkien noodles per packet direction
Meanwhile, heat 1 tbsp peanut oil in a wok over high heat.
Add beef strips and stir-fry until brown, usually about 5 minutes. Transfer to a bowl and set aside
Add a further 1 tbsp peanut oil to wok.
Add onion, garlic, and ginger to wok and stir-fry for about 3 minutes or until onion is soft.
Add broccoli, red capsicum and frozen peas into wok and stir-fry for a further 3-4 minutes or until vegetables are tender
Return beef strips to wok and add soy sauce and sweet chilli sauce and stir-fry for about 2 minutes
Add noodles and toss to combine
Divide between bowls to serve
