Apple Custard Cake

Both custard and warm cooked apple are two of my favourite dessert ingredients.  This cake is a great combination of both and provides the added bonus of a cake layer on which to base it all.

The custard flavoured cake base is layered with a thick coating of vanilla custard.  It is then topped with sliced apple pie filling.  Finally sprinkled with a cinnamon sugar mix.  This is best served warm with additional warm custard to pour over each slice.  Ice cream is also a good option!  A wonderful blending of apple and custard.

To help this cake initially set once it is out of the oven, you may feel the need to place it in the refrigerator for a period of time.  As mentioned above, this dessert is best served warm, so a short blast in the microwave before serving will also be a good option.

  1. Grease & line with baking paper a 31cm x 17cm (base measurements) baking tray.
  2. Pre-heat a fan forced oven to 160° C (320° F).
  3. In a large bowl using a stand mixer, add butter, caster sugar & vanilla extract and beat until fully combined.
  4. Add eggs, one at a time, and continue beating after each addition until combined.
  5. Add plain flour, custard powder & baking powder and continue beating until fully combined.
  6. Spread mixture evenly into the baking tray and smooth the surface.
  7. Spread vanilla custard evenly over the top of the mixture in the baking tray.
  8. Spread apple pie filling (slices), evenly over the top of the vanilla custard.
  9. Place in oven and bake for 1 hour.
  10. Remove from oven and allow to cool in baking tray before removing. NB. you can place tray in refrigerator to assist with setting if required.
  11. In a small bowl add icing sugar & ground cinnamon and whisk to mix through.
  12. Sprinkle icing cinnamon mixture over cake before serving.
  13. The cake is best served warm with extra vanilla custard (either warm or cool to preference). Warm the cake in the microwave before serving.
