Banana Pancakes With Honey Lemon Syrup

Pancakes are a favourite for many people as a real treat for breakfast or brunch on the weekend.  They are rarely the healthiest of meals, usually due to the mountain of ice-cream, cream and maple syrup that can often be added.  They are a great treat however.  When you add some fruit to your pancakes,whether mixed through or as a topping, you at least have some healthy ingredients.  This dish uses bananas as the main fruit ingredient.

The golden brown pancakes are rich in sweet banana flavour.  Topped with sliced banana & pistachio nuts for a subtle crunch.  Drizzled with a sweet honey & lemon syrup to create a lush full flavoured pancake delight.  Add ice-cream or whipped cream to really spoil yourself!

Ice-cream & whipped cream are a suggested serving addition, however these pancakes are great tasting simply with the honey & lemon syrup.

Instructions
  1. In a large bowl add bananas and using a fork, mash bananas until pureed.
  2. Add egg yolks, caster sugar, milk & butter. Stir until fully combined.
  3. Add flour & baking powder and stir to mix through.
  4. In a separate bowl, add egg whites and using an electric mixer beat until fluffy and soft peaks form.
  5. Fold egg whites into banana mixture.
  6. Heat a non stick frying pan over low to medium heat.
  7. Spoon a 1/4 cup size of banana mixture into the pan and cook until mixture starts to bubble. Flip pancake and cook other side until golden. Note: cook several pancakes together depending on the size of your pan.
  8. Remove pancakes from pan and keep warm until ready to serve.
  9. Serve pancakes as a stack of 2 or 3. Top with sliced banana and pistachio nuts and drizzle with honey & lemon syrup (per instructions below).
Honey Lemon Syrup
  1. In a small jug, add honey & lemon juice.
  2. Place in microwave for 30-60 seconds then stir to mix through
