Cajun Beef Tortillas

I really enjoy recipes that make use of cajun seasoning. For me, this is a perfect blend of both spice and flavour. The seasoning can turn even the simplest ingredients into a really tasty dish.

A simple easy to cook meal that elevates beef mince to a wonderful tasty, cajun spiced meal. The beef is spiced and mixed with capsicum and kidney beans, then baked before being topped with cherry tomatoes and advocado for serving.

Served with sour cream and warm tortillas for a meal that is as easy to eat as it is to prepare & cook.

This meal can really be done in about 30 minutes, so when you are pressed for time or even thinking about takeaway, this is a great alternative.

This is a meal on high rotation at our house.

  1. Pre-heat a fan forced oven to 200°C (390°F).
  2. Add mince to a large baking dish. Spread over the dish and break up the clumps.
  3. In a small bowl, add cajun seasoning, ground oregano & ground cumin. Stir to mix through.
  4. Sprinkle over the beef mince.
  5. Drizzle 1 tbsp Olive Oil over the mince.
  6. Place in oven and bake for 5 minutes.
  7. Remove from oven, stir to mix through.
  8. Reduce fan forced oven to 180°C (350°F).
  9. Sprinkle red onion and green capsicum over the top of the mince.
  10. Drizzle 1 tbsp Olive Oil over the top.
  11. Return to oven and bake for 10 minutes.
  12. Remove from oven and stir to mix through.
  13. In a small jug, mix boiling water and Tomato Paste and stir to mix through.
  14. Sprinkle Red Kidney Beans over the mince.
  15. Pour tomato paste over the mince then stir to mix through.
  16. Return to oven and bake a further 5 minutes.
  17. Remove from oven and sprinkle with cherry tomatoes and avocado.
  18. Pour lime juice over the top.
  19. Garnish with coriander, then serve with sour cream and warm tortillas.
