Chicken, Mushroom & Spinach Lasagne

Lasagne is a favourite pasta for many people. It’s a very versatile dinner. You can load it up with vegetables or keep it simple and serve separately with your favourite vegetables or salad. We usually have the traditional beef based lasagne which is fantastic, particularly leftovers the next day. This dish is a lovely alternative to the more traditional beef based lasagne.

A lovely lasagne filled with chicken, mushroom and baby spinach. The ricotta based sauce is fantastic and provides a wonderful creamy finish. A great alternative to the traditional tomato & beef based lasagne.

Instructions
  1. Preheat a fan forced oven to 180°C (350°F).
  2. Heat olive oil in a large frying pan over medium high heat.
  3. Add onion and garlic and cook for about 2 minutes until onion softens.
  4. Add chicken mince and cook for 3-4 minutes until chicken just browns.
  5. Add mushrooms, stir to mix through and cook for a further 1 1/2 minutes.
  6. Add plain flour, stir to mix through and cook for a further 1 minute.
  7. Add cooking cream and mustard, stir to mix through, then reduce heat and simmer for five minutes to allow sauce to thicken a little.
  8. Remove from heat, season with salt and pepper, then set aside.
  9. In a large rectangle baking dish, spread 1/3 of the ricotta sauce (see instructions below) over the base of the dish.
  10. Top with a single layer of lasagne sheets.
  11. Add spinach to remaining ricotta sauce and mix to fully combine.
  12. Top Lasagne Sheet with 1/3 of the chicken mixture
  13. Sprinkle with about 1 cup of pizza blend sauce.
  14. Top with another layer of lasagne sheets. (this is the second layer)
  15. Top with 1/3 chicken mixture, sprinkle with about 1 cup of pizza blend cheese, then top with 1/3 of the ricotta (with spinach) sauce.
  16. Top with another layer of lasagne sheets. (this is the third layer).
  17. Top with 1/3 chicken mixture, sprinkle with about 1 cup of pizza blend cheese, then top with 1/3 of the ricotta (with spinach) sauce.
  18. Top with another layer of lasagne sheets. (this is the fourth layer).
  19. Top with remaining 1/3 of ricotta (with spinach) sauce, then sprinkle with remaining 1 cup of pizza blend cheese.
  20. Place in oven and bake for about 35 minutes.
  21. Remove from oven, let sit for about 5 minutes then serve.
Ricotta Sauce
  1. In a large bowl, add ricotta, egg & milk. Stir to fully combine
  2. Add pizza blend cheese, then stir to mix through. Set aside.
