Chilli Beef & Black Beans

This is a really easy to make chilli beef dish that you can spice to your preference by adding a little or a lot of ground chilli.  You can also optionally add chipotle sauce to further ramp up the spiciness.

The beef is spiced with taco seasoning & chilli.  Mixed with diced vegetables before simmering in a tomato base and finally adding black beans.  Topped with sour cream & avocado and served with corn chips.  A very tasty yet really simple & easy to make chilli beef meal.

  1. Heat olive oil in a large frying pan over medium high heat.
  2. Add onion, celery, carrot & garlic. Cook for about 3 minutes until softened.
  3. Add taco seasoning and ground chilli, stir to mix through & cook for about 60 seconds until fragrant.
  4. Add beef mince and cook for about 5 minutes until browned. Break up clumps and stir regularly.
  5. Add diced tomatoes, water & tomato paste and stir to mix through.
  6. Bring to boil then reduce heat and simmer for about 20 minutes (uncovered), until liquid reduces and thickens.
  7. Add black beans, stir to mix through and cook a further 5 minutes.
  8. Remove from heat, serve in bowls topped with sour cream and avocado. Serve with corn chips.
