Gnocchi With Prosciutto & Spinach

I really enjoy pasta bake dishes, usually for their ingredients as well as their simplicity.  They are typically quick & easy to prepare and provide a lovely full flavoured heartening meal.

Pasta bake dishes do not come much easier than this one.  Using only a few ingredients to create a wonderful meal to please the family.

The gnocchi is initially cooked before being mixed with mascarpone, prosciutto, spinach and cherry tomatoes.  Topped with parmesan before finishing under the grill.  A lovely simple & easy to make gnocchi dish that provides a nice alternate to the cream based pasta dishes.

The beauty of this meal is that it can be prepared and made in about 30 minutes.

  1. Cook gnocchi according to packet directions. Drain and transfer to a large baking dish.
  2. Preheat large grill area.
  3. Add mascarpone to baking dish and stir to mix through gnocchi.
  4. Add prosciutto, spinach & cherry tomatoes. Toss to mix through. Season with pepper.
  5. Top with parmesan then place under a grill for about 4-5 minutes until cheese melts and is golden.
  6. Remove from grill and serve.
