I really enjoy pasta bake dishes, usually for their ingredients as well as their simplicity. They are typically quick & easy to prepare and provide a lovely full flavoured heartening meal.
Pasta bake dishes do not come much easier than this one. Using only a few ingredients to create a wonderful meal to please the family.
The gnocchi is initially cooked before being mixed with mascarpone, prosciutto, spinach and cherry tomatoes. Topped with parmesan before finishing under the grill. A lovely simple & easy to make gnocchi dish that provides a nice alternate to the cream based pasta dishes.
The beauty of this meal is that it can be prepared and made in about 30 minutes.

Ingredients
- 800 g Gnocchi
- 250 g Mascarpone Cheese
- 200 g Prosciutto thinly sliced and chopped.
- 120 g Baby Spinach
- 250 g Cherry Tomatoes
- 1/2 cup Parmesan grated

Instructions
- Cook gnocchi according to packet directions. Drain and transfer to a large baking dish.
- Preheat large grill area.
- Add mascarpone to baking dish and stir to mix through gnocchi.
- Add prosciutto, spinach & cherry tomatoes. Toss to mix through. Season with pepper.
- Top with parmesan then place under a grill for about 4-5 minutes until cheese melts and is golden.
- Remove from grill and serve.
