Honey Mustard Chicken Risoni

Honey & mustard are two ingredients that blend very well together to provide a lovely subtle flavour with neither ingredient being overpowering.  Mixed with cream and you have fantastic sauce that will complement many different dishes.  It is great with either risoni or rice.  It is really special when served with chicken.  This dish uses both chicken & risoni as the base, however it is really the honey mustard sauce that transforms this meal into something special.

The chicken is initially browned & cooked before simmering in a beautiful honey & mustard cream sauce.  Served on a bed of risoni to soak up the wonderfully subtle honey & mustard blend.  Topped with snow peas for a nice crunchy finish.  An amazing transformation of a simple chicken dish.

This dish is simple to make and you don’t need to put aside a lot of time to make a meal the whole family will love and could become a real rotation favourite in your household.

Instructions
  1. Cook Risoni per packet instructions. Drain & set aside.
  2. While Risoni is cooking, heat 1 tbsp olive oil in a large frying pan over medium-high heat.
  3. Add chicken and cook until browned and cooked through. Remove from pan and set aside.
  4. Add remaining olive oil to pan, then add capsicum, onion & garlic. Cook for about 5 minutes until tender.
  5. Add honey, wholegrain mustard then cream. Stir to mix through, then reduce heat. Simmer for about 4 minutes until sauce thickens slightly.
  6. Return chicken to pan, stir to mix through and continue cooking for a further 2 minutes to heat chicken through.
  7. While chicken is heating, cook snow peas for about 2 minutes in the microwave.
  8. Add risoni to pan and stir to mix through. .
  9. Remove pan from heat and serve, topped with heated snow peas
