Mexican Chicken With Rice & Beans

There are many different recipes for a ‘Mexican Chicken’ dinner, all with a range of different ingredients.  This is a relatively simple Mexican Chicken dish where the flavour comes mainly from the Chipotle Paste that is mixed through.

A simple mixture of shredded chicken, chipotle paste for the flavour and heat burst, capsicum and diced tomatoes.  Served with rice mixed with Pinto Beans, coriander and some lime juice.  All mixed together for a very savoury combination.  Add some sour cream for that creamy finish.

If Chipotle Paste is not your favourite you could always substitute with Taco or Fajita seasoning to get the Mexican taste that you know and love.

Mexican Chicken
  1. Heat olive oil in a large frying pan over medium high heat.
  2. Add onion & capsicum and cook for about 3-4 minutes until softened.
  3. Add chipotle paste and stir for about 1 minute until mixed through.
  4. Add diced tomatoes and stir to combine.
  5. Add chicken and approx 1 cup water and stir to mix through. Add more water if required to just cover chicken, but don't add too much.
  6. Turn heat down and simmer for 20-25 minutes until chicken is cooked through.
  7. Once cooked, remove pan from heat, then remove chicken from pan and using two forks, shred chicken fillets.
  8. Place pan back onto heat and Add shredded chicken and sugar back into pan. Stir to combine. Season with pepper as required.
  9. Remove from heat, garnish with coriander and serve with rice and beans (see instructions below)
Rice & Beans
  1. While the chicken is cooking, cook white rice using rice cooker.
  2. Once rice is cooked add pinto beans, corinader and lime juice to rice cooker and stir to mix through. Allow to sit on warm setting for a few minutes to warm beans.
  3. Once done, divide rice mixture and serve with chicken.
