Udon Noodle Beef

Wok cooked dinners are usually an easy way to create a tasty meal with a nice savoury sauce and a range of tasty ingredients.  The wok allows the dinner to be made quickly with very little cleanup.  They are great for hectic week nights when you just want something simple.

The beef is initially browned in the wok before being simmered in a ginger, hoisin, soy & stock sauce.  The japanese Udon Noodles & tomato slices are tossed through towards the end before garnishing with coriander.  The tomato adds a juicy sweetness to the tasty savoury sauce.  A simple, easy to make wok cooked meal.

Instructions
  1. Cover Udon noddles with boiling water and heat according to packet instructions. Drain and set aside.
  2. Heat one tbsp peanut oil in a wok over medium high heat.
  3. Add beef strips and cook until browned.
  4. Add cooking wine and continue cooking until wine has evaporated. Remove beef from wok and set aside.
  5. Heat remaining peanut oil in wok, then add ginger, garlic & onion and cook for 1-2 minutes or until fragrant.
  6. Return beef to wok and add hoisin sauce, soy sauce, tomato paste & chicken stock. Bring to boil then reduce heat and simmer for a few minutes to allow flavours to develop & sauce to thicken slightly.
  7. Add noodles & tomato slices to wok and toss to mix through. Stir-fry until heated through.
  8. Remove from heat, garnish with coriander and serve.
