Pork Fried Rice

Sometimes you just want something simple & easy to make for dinner, without scrimping on flavour that will also include vegetables to provide a reasonably well balanced meal.  This dish easily fits that criteria.

The pork is cooked with broccoli, carrot and cabbage.  Garlic and ginger add some extra flavour while the soy/vinegar mixture blends beautifully through the dish without overpowering.  The dish is finished and body added by mixing through cooked brown rice.  All done simply and easily in the wok.  A great, simple stir-fry rice dish.

This dish uses cooked brown rice in the recipe, so take note that you should prepare this before starting on the rest of the dish.  The brown rice can be cooked well in advance, if that is your preference.

  1. Add soy sauce & white vinegar to a small bowl and stir to combine. Set aside.
  2. Add half of the pork to a wok over medium high heat and cook until browned. Remove from wok, set aside and keep warm.
  3. Add remaining pork to wok and repeat process. Set aside and keep warm.
  4. Add 1 tbsp vegetable oil to wok.
  5. Add 1 1/2 cups (half) of the brown rice to the wok and stir-fry for approx 3 minutes. Remove from wok, set aside and keep warm.
  6. Add another 1 tbsp vegetable oil to wok.
  7. Add remaining brown rice and repeat process. Set aside and keep warm.
  8. Add another 1 tbsp vegetable oil to wok.
  9. Add broccoli, carrot, garlic & ginger, stir to mix and cook for about 2-3 minutes.
  10. Add cabbage and cook a further 1 minute.
  11. Add pork, rice and soy sauce mixture and stir until coated.
  12. Remove from heat and serve.
