Pork Sausage Stroganoff Penne Bake

The pork sausage is nice and juicy. The mushroom sauce is lovely and creamy. The penne provides  a filling addition. The mozzarella gives a beautiful baked cheesy finish. An easy to prepare and make dinner.

Pork sausage is used for this recipe as you can buy a version that has already been mixed with a range of herbs that enhance the overall flavour of the dish.

  1. Cook penne according to packet directions.
  2. Heat olive oil in a large oven proof baking dish over medium high heat.
  3. Add sausage pieces and cook until browned.
  4. Add mushroom, garlic & paprika. Stir to mix through and continue cooking for 3-4 minutes until mushroom is tender.
  5. Add cream, stir to mix through, bring to boil then remove from heat.
  6. Season with salt & pepper.
  7. Pre-heat oven grill on high.
  8. Add penne and 1/2 cup mozzarella. Stir to mix through.
  9. Sprinkle remaining 1/2 cup mozzarella over the top.
  10. Cook under the grill for 2-3 minutes until cheese melts and is golden.
  11. Remove from heat, garnish with parsley and serve.
